Sucrose is a disaccharide formed by a glycosidic bond between glucose and fructose. Hydrolysis (by sucrase/invertase) breaks this bond, yielding one molecule of glucose and one of fructose. Lactose yields glucose + galactose; starch and glycogen yield glucose only.
