Starch is a polysaccharide storage carbohydrate in plants composed of two components: (1) Amylose — a linear polymer of glucose linked by \(\alpha\)-1,4-glycosidic bonds (~20–30% of starch), and (2) Amylopectin — a branched polymer with \(\alpha\)-1,4 linkages in the main chain and \(\alpha\)-1,6 linkages at branch points (~70–80%). Glycogen is the animal storage polysaccharide.
